The EFS Faculty & Specialists
William C. Hurst, Ph.D.,
is
the Outreach Coordinator, a Professor on the UGA faculty, and our fruits and vegetables food
safety specialist. His food safety research for the fresh fruit and
vegetable industry has been instrumental in the development of many
safety guidelines recommended today by the FDA. He developed innovative GAPs and HACCP training courses tailored to the fresh produce and
fresh-cut produce industries that are now being imitated by others
around the country. Dr. Hurst received the 2004 D.W. Brooks Award for
Excellence in Extension, a much-deserved honor.
Karina G. Martino, Ph.D.,
is a new Assistant Professor (2007) on the UGA faculty and a Food Processing
and Safety Specialist.
She is working with the peanut industry, and the meat and poultry

Sharon P. Kane, M.S.,
is a Food Business Development Specialist, who works with both the
Extension Food Science Outreach Program and the Center for Agribusiness
and Economic Development. Her specialty is the economics of food
processing in Georgia. Ask her about

A. Estes Reynolds, Ph.D.,
is
an Emeritus Professor on the UGA faculty, and has now retired from being our meat
and poultry specialist with more than 30 years experience working with
the meat industry. He has an international reputation for his expertise
in processing and curing meats, for developing new and value-added food
products, and for food safety auditing and training.
The EFS Staff
Marian Wendinger,
our
conference coordinator, keeps things running smoothly around here. She's
received numerous awards over her 18-year career with EFS for her
dedication and service. She's the one to call about your workshop
reservation or nutrition facts panel preparation.
Kathryn Acosta,
our graduate assistant, prepares nutrition facts panels for our clients
and performs pH, Brix and other tests on food products as required.
Danny Morris
is
the meat plant supervisor for EFS and works closely with the faculty and
specialists on new product development and food safety research.
Eve Mayes
is
the technical writer for EFS, who prepares participant training materials for the EFS workshops and seminars, and
keeps the website up-to-date.
